What's for dinner

We were having cube steaks & gravy that I made yesterday while reheating our chicken & stuffing , but my dear, darling kids snuck into the fridge after bedtime and ate every last bite.
So, probably tomato sandwiches (fresh grown from our garden), and onion petals.

Tomato Sandwich with Basil

Amount Measure Ingredient -- Preparation Method-------- ------------ -----------------------12 slices whole grain bread
1 onion -- grated
1 cup mayonnaise
salt and pepper -- to taste
4 tomatoes -- sliced
seasoned salt -- to taste
1 bunch basil

Combine the grated onion, mayonnaise, salt and pepper. Spread mixture onto the bread. Cover and refrigerate.

To prepare the tomatoes, peel, slice, and drain thoroughly between layers of paper towels.

Sprinkle the tomatoes with seasoning salt before assembling the sandwiches. Place a tomato slice on top of 6 slices of bread. Top with basil.

Place the other 6 slices of bread on top of each stack. Cover with a damp towel and refrigerate until ready to serve.

NOTE: I have to put Danish ham & maybe some crisp bacon on dh's, otherwise, he won't eat it. "It's just not a meal without some meat on the table".

Onion Petals

Amount Measure Ingredient -- Preparation Method-------- ------------ -----------------------1 cup onion blossom coating
1/2 cup water
1 large Vidalia onion -- cut into pieces (just cut into rings & cut each ring into 3-4 pieces)

Put cut onion pieces into ice water; set aside. In a small bowl, mix coating and water thoroughly. Heat approximately 1" of oil in a heavy frying pan.

Take a few petals out of water at a time; shake off excess water. Coat generously in coating mix.
Fry until golden brown. Drain on paper towels.

Serving Ideas : Serve with bloomin onion sauce.

NOTES : Recipe can be halved or doubled.

Cube Steaks & Gravy

Amount Measure Ingredient -- Preparation Method-------- ------------ -----------------------6 slices cube steaks
oil -- enough to cover bottom of pan
salt and pepper -- to taste
1 cup flour
Gravy:
4 Tablespoons flour
2 cups COLD water
drippings from cube steak
salt and pepper -- to taste

Heat oil to sizzling. Turn down to low-medium.

Salt and pepper each steak. Coat each side in flour. Add to hot oil. Cook until golden brown; flipping 3-4 times until done. Don't let stick to pan.

Drain oil out of pan; leave drippings and enough oil to add flour and water mixture to add gravy.

Mix flour with COLD water; mix well. Add to oil and drippings. Cook until thickened. Add more water 1 Tablespoonful at a time if gravy gets too thick.

Cover cube steak with gravy.

Serve with mashed potatoes.

Chicken & Stuffing Bake

Amount Measure Ingredient -- Preparation Method-------- ------------ -----------------------1/2 cup water
1 Tablespoon butter
4 cups herb-seasoned stuffing cubes
6 boneless skinless chicken breast halves
1/8 teaspoon paprika
1 can cream of mushroom soup
1/3 cup milk
1 Tablespoon fresh parsley -- chopped

Preheat oven to 350°.

Bring water and butter to a boil in a large saucepan; remove from heat. Stir in stuffing mix.
Spoon mixture across center of a lightly greased 3-quart casserole dish.

Arrange chicken on each side of stuffing. Sprinkle with paprika; set aside.

Combine soup, milk and parsley; pour over chicken.

Bake, covered, for 15 minutes.

Uncover; bake for an additional 15 minutes, or until chicken is cooked through.
